Irish beef is famous throughout the world. Part of the secret is the fact that, thanks to our climate, our cattle can graze outdoors throughout the year, eating fresh grass. The other part of the secret is in the butcher’s craft – knowing how to age each cut perfectly. Bull and Castle on Lord Edward Street, across Dame Street from Handel’s Hotel, is run by FX Buckley, one of Ireland’s most respected butchers so, it goes without saying, the beef is second to none.
